Meat Free Meals – Italian

Last night’s Meat Free Meals was a great success. Eleven people turned out to sample pesto pasta and polenta, which was prepared to demonstrate Italian cuisine. One of the attendees shared her experience of visiting Italy as well, which was fascinating.

If you’d like to try this recipe yourself, here it is:

Pesto Pasta (serves 8)

1 cup  basil, loosely packed
3 tbsp  extra virgin olive oil
1 tbsp  lemon juice
1 clove  garlic , crushed
2 tbsp  pine nuts
8 oz  whole wheat pasta
1. Prepare pasta as directed. Drain and return to pot.
2. Combine basil, olive oil, lemon juice, garlic, and pine nuts in blender or food processor. Blend until ingredients form a paste.
3. Add pesto to drained pasta; stir to combine.

14.6 g fat
0 mg cholesterol
11 mg sodium
5.3 g fiber
7.8 g protein
