Quin-who-a? Quinoa!

Wednesday evening at 5:30, Meat Free Meals attendees enjoyed Confetti Quinoa, a tasty and healthy dish featuring red and green bell pepper. Cooking the quinoa in vegetable broth adds to the flavor of the dish, and it can be served as a side dish, in a salad, or even as the main course. Discussion also centered on using quinoa in sweet recipes, almost like rice pudding.

The next Meat Free Meals is on Wednesday, April 4 at 5:30 pm. We will discuss tofu and make a tofu scramble. This discussion is always in demand, so don’t miss it!

Quinoa facts:

  • It was used by the Incas and domesticated as many as 5000 years ago
  • It can be cooked like rice and is just as versatile
  • It is a complete protein, meaning it has all essential amino acids – and it averages about 5g of protein per serving
  • It’s delicious!
